I wanted to share with you this simple recipe for carrot top pesto that I make every year. This combines a few of my favourite things. Not only is it surprisingly delicious and relatively cheap to make. It also uses up a part of the vegetable that would normally be thrown away, and after how much time, energy and water it takes to grow, I love not wasting as much as possible.
It freezes beautifully. You can make a big batch and have delicious homemade pesto and a quick supper whenever you need it.
